Stuffed Omelette
Stuffed omelette makes a filling lunch that does not leave one feeling bloated. It also serves well as a quick, simple dinner dish.
To serve four:
* 1 paprika/pepper
* 100g tinned mushrooms
* 1/2 teaspoon white pepper
* 150 minced meat
* 3 tablespoons butter
* 8 eggs
* 1 teaspoon chopped parsley
* 1/2 teaspoon seasoning
1. Wash paprika and remove the seeds, then dice.
2. Drain off the mushrooms and cut larger ones into smaller pieces if necessary
3. Braise the diced paprika, mushrooms, 1/4 teaspoon of pepper and minced meat in half of the butter for 10 minutes and then keep warm to the side
4. Beat the eggs well and mix with the parsley. Add the rest of the pepper and the seasoning to taste
5. Melt 1/2 a tablespoon of butter in a hot pan and add half of the egg mixture to make an omelette. Place the omelette on a warm platter. Use the rest of the egg mixture to make a second omelette.
6. Place the minced meat stuffing on the first omelette and cover with the second one.
The delicious stuffed omelette dish is ready to serve with butter potatoes.
